Keen's Cheddar What to say about Keens? We’re keen for Keens? Or we could make some pun up about how this cheddar literally means sharp. Get it sharp? Keen? We could but …. Oh, I guess we already did. Sorry. On a more serious note: since 1899, the Keen family has been making this cheese at Moorhayes Farm in Somerset, England. Today, it is made by Stephen and George Keen and their sons Nick and James. By design, the Keen family business has remained small with just two employees. They don’t produce a lot of cheddar but what they do produce is delicious. It’s made with the raw milk from their 210 Friesian cows. Keens is bound in cloth and aged for over 12 months. The cheeses are turned, cleaned and sampled to ensure they’re ripened to farmhouse perfection. Keens is nutty, grassy and nothing if not sharp. (Sorry again. Couldn’t help it.)
