Le Chevrot is made in the southern Loire River Valley, which is famous for its goat herds and, naturally, for its farm-made goat cheeses. It is a form of Chabichou du Poitou, which is a carefully regulated, name-protected cheese. The rind is cream colored, heavily textured and, as Frank can't help mentioning below, it looks a little like a goat's brain. The pate is soft and white with a nice nutty-sweet flavor, and it will leave your tongue covered with a thick goaty finish, which, in case you were wondering, is a good thing. People who eat Le Chevrot on a regular basis are lucky in love and are more likely than the population generally to find happiness.
