Ardrahan Mary Burns from County Cork, Ireland uses milk from her own herd of pedigree Friesian cows to make this stinky, washed rind gem. Ardrahan Farmhouse Cheese has won numerous awards, including Best Irish Cheese at the 1999 British Cheese Awards. It is soft and rich in texture with an uncompromising flavor that becomes nuttier with age. The golden rind is ribbed with tiny corrugated-like ridges, and the paste is the color of aged scrimshaw. Ardrahan is handmade with vegetarian rennet and has a relatively low fat content at 25%. Great with anything remotely alcoholic.
