This raw cow’s milk cheddar is made in Vermont by Scott Fletcher of the Grafton Village Cheese Company, which started making cheese back in 1890. Aged for four years, Grafton 4-star is crumbly, dewy and sharp. In our opinion, it’s the best cheddar made in the United States, period. And we’re not alone. The 4-star has won more than one award for quality. Excellent with dried fruits, nuts, chutneys, crusty breads and big wines.
Pairings: A Magic Hat Fat Angel Lager or a big musty red wine. |
