Grafton 4-star Cheddar This raw cow’s milk cheddar is made in Vermont by Scott Fletcher of the Grafton Village Cheese Company, which started making cheese back in 1890. Aged for four years, Grafton 4-star is crumbly, dewy and sharp. In our opinion, it’s the best cheddar made in the United States, period. And we’re not alone. The 4-star has won more than one award for quality. Excellent with dried fruits, nuts, chutneys, crusty breads and big wines.

Pairings:
A Magic Hat Fat Angel Lager or a big musty red wine.
